You could share all your extra disk space using a block-level protocol 
like iSCSI and then have a single host span all the volumes together. 
This should work across multiple platforms, although you may have to pay 
for iSCSI Target software on Windows.  The iSCSI initiators (clients) 
are generally freely available for nearly all OSes (single exception 
being Mac OS X.)

Note that if any one system goes down, all the space is likely to be 
down.
