Or create a subdomain called pobox.example.com and give every user a CNAME
in that domain pointing to their mail server.

windlord:~> host rra.pobox.stanford.edu
rra.pobox.stanford.edu is an alias for popserver2.stanford.edu.
popserver2.stanford.edu has address 171.64.14.68

Works for us.  The only real problem with it is that SSL e-mail gets
interesting if you can't find someone to give you a valid wildcard cert
and you don't have a local CA.
