I assume you mean ZFS on the fileserver side. This thread is about
client-side encryption (i.e. so the server doesn't know what's in the
users' files).

If you _are_ talking about the client-side (putting a blob in AFS and
mounting that)... I'm not sure how well that would work, but I expect an
approach like EncFS is more well-suited for this scenario, and is at
least more end-user-friendly :)
