Well, I forgot to ask...

Does anyone have any notes on just where all those places are, or even
better, an ad-hoc patch to convert the source tree for a complete
debugging build?

How are folsk building debug versions today?   Manually hacking the
generated Makefiles, and recompiling by hand?
