setenv CVSROOT :pserver:anonymous@cvs.openafs.org:/cvs
or
CVSROOT=:pserver:anonymous@cvs.openafs.org:/cvs; export CVSROOT

cvs login
(password is anonymous)

cvs co openafs

or

cvs co -r openafs-stable-1_1_x openafs

(or whatever tag you might want)
